Sunday Brunch: Gluten Free, Vegan Bread Zucchini Waffles with ...

Hey friends! Hope you?ve been enjoying restful, happy weekends so far. These last two days have been my final gasp of free time before my summer semester ends, so I?ve been soaking up every bit of restfulness I can. This includes a lovely brunch this morning at Andrea?s house, complete with wholesome, healthy, and delicious vegan fare!

Yesterday, as we were planning our meal, Andrea let me know that she was making zucchini pancakes, and would I? perhaps bring a topping? I responded that I?d be glad to. I brought three different things so that we?d have a range of options, but the standout was a fantastic mango, avocado, and heirloom tomato salad with cucumber and chives.

I?ll be honest: I struggle with chopping up heirloom tomatoes and putting them into anything, given how costly they are (and how delicious they are all on their own). But I had a tomato that was ready to be overripe, and a mango that was in the same condition. So, last night, I figured that a quite, seasonal salad would be the best way to use them up. And how better to celebrate my rather recent conversion from mango hater to mango eater?

Quick Mango, Avocado, and Heirloom Tomato Salad (raw, vegan, gluten free, soy free)

Serves 2-4

1 ripe ataulfo mango (you can use a small Haden or Tommy Atkins mango, too, but the ataulfo will be incomparably sweet and creamy)
1 medium sized cucumber, diced
1 ripe Haas avocado, diced
1 medium heirloom tomato, diced
2 tbsp chopped chives
2 tbsp fresh lime juice
2 tsp agave syrup
Sea salt to taste

Mix all ingredients together. Let marinate a few hours for maximum flavor!

The dollop of yogurt you see in the photo above was the Amande yogurt in coconut flavor.

Over time, I?ve found that the Amande yogurts are my favorite non-homemade vegan yogurts; I like them more than the So Delicious coconut milk yogurts (though I?m still waiting to try the Greek yogurts from that brand). The Amande yogurts are made from cultured almond milk, and while the texture isn?t nice and thick the way I love, the flavors are delicious, and the tanginess is there. Two thumbs up.

The waffles, of course, were the star of the event. And how could they not be? Perfectly sweetened, light, fluffy, and packed with zucchini, these were total winners. Notice that the pancake plan got switched to waffle midway: Andrea has a wafflemaker, and decided that it would probably be quicker and easier to prepare them that way. I eat pancakes all the time, but I haven?t had a good vegan waffle since I gave my own wafflemaker away before my move to DC (it was just way too heavy to move, given how little I used it), so I was excited about this development.

Andrea based her recipe off of a recent one from Smitten Kitchen. Modifications included omitting the egg, naturally, and she used Bob?s Red Mill GF all purpose flour in place of standard all purpose. She traded Grade B maple syrup for sugar, and added some applesauce to the mix. The recipe is posted here in its entirety, courtesy of Andrea, who was kind enough to share it with me in her home, and is now kind enough to share it with all of us on CR!

Andrea?s Gluten Free, Vegan Zucchini Bread Waffles

Serves 2-3

Zucchini Bread Waffles (or Pancakes)

1 large zucchini, grated
1/2 cup unsweetened apple sauce
3 T olive oil
1/2 teaspoon vanilla extract
1/4 cup ?soured? almond milk (to sour, add 1 teaspoon of apple cider vinegar to the measuring cup, then add almond milk to measure 1/4 cup)
2 tablespoons maple syrup or other sweetener to taste
1 ? 11/2 cups Bob?s Red Mill All-Purpose, Gluten Free Flour Mix
1/4-3/8 teaspoon xanthan gum ? according to how much flour you use
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/8 teaspoon nutmeg
Coconut oil spray for waffle machine or griddle

1. Heat up waffle machine or griddle.

2. Mix dry ingredients into large bowl.? Mix wet ingredients into smaller bowl.? Mix wet ingredients into dry ingredients.

3. Spray the griddle or waffle maker. Cook waffles according to the manufacturer instructions or scoop batter onto griddle in 1/4 cup ? 1/2 cup sized dollops ? depending on how large you want your pancakes.

And if this all wasn?t enough, Andrea also shared some of her homemade kombucha with me. Lucky, lucky me.

Microsoft intros Wedge Mobile Keyboard, whose case doubles as a stand

As we've seen, there will be no shortage of tablet / laptop hybrids on offer when Windows 8 starts shipping this fall. But since those keyboard docks will typically be sold separately, that means you're also about to see loads of third-party alternatives. Not to be left out, Microsoft just announced a Bluetooth mobile keyboard, along with its smallest-ever mouse -- both of which can be used with any Windows tablet.

Starting with that Wedge Mobile Keyboard, it resembles Zaggmate's iPad case from 2010, in that it has a hard case to make it more travel-resilient. Here, though, the casing is made of flexible rubber, allowing it to double as a tablet stand. Putting it over the keys also turns the keyboard off, allowing you to conserve battery life. On board, you'll also find hotkeys specific to certain Windows 8 features, such as the Charms Bar. And, as the name suggests, the keyboard rises a bit in the back, thanks to the battery door on the other side (this takes two AAA cells, by the way.) One caveat: though you can use it with Windows 7, 8 and RT, and even Mac OS X, but it's not compatible with Vista. Sorry, folks.

In a similar vein, the tiny Wedge Touch Mouse has a matching soft-touch surface and is also Bluetooth-enabled. Like other mice in Microsoft's lineup, it has BlueTrack technology, allowing it to be used on a wide variety of surfaces. The mouse, which runs on a single AA battery, also shuts down whenever you power down whatever device it's paired with. These products will ship "soon," according to Microsoft, with the keyboard retailing for $79.95 and the mouse going for $69.95. For now, we've got a bunch of photos below for your viewing pleasure.

Madagascar rivals 'to meet again in few days'

Madagascan rivals are due to meet again in a "few days" after their first direct talks ended in the Seychelles without finalising an agreement, the island's ruler Andry Rajoelina said Thursday.

"There will be another meeting in a few days," he told reporters on return from the Seychelles where he met the man he toppled in 2009, Marc Ravalomanana, in talks brokered by the regional bloc SADC.

He said they met twice for several hours over the two days they spent on Desroches Island, a private beach paradise some 230 kilometres (140 miles) from Mahe, the Indian Ocean archipelago's main island.

The first was between the two of them and the second roped in South African President Jacob Zuma, who has been the mediator in the crisis, along with Seychelles President James Michel.

"During the two meetings, the two presidents decided to schedule another meeting. After the second round, in a few days, there will be a follow up at the SADC summit," he said.

The 15-nation Southern African Development Community, which mediated the talks, has set a July 31 deadline for the rivals to settle their differences, so a timetable for elections can be unveiled next week.

The Indian Ocean island of Madagascar has been mired in political crisis since Rajoelina ousted Ravalomanana in March 2009 with the army's support.

Sprint Q2 2012 Earnings: Net Loss Widens To $1.4B, 1.5M iPhones Sold

U.S. wireless carrier Sprint Nextel has just posted its results for Q2, and while it continues to prepare for a brighter future ahead, it reported a widening net loss of $1.4 billion, with negative EPS of $.46 per share, failing to meet analyst expectations. That's compared to a net loss of $847 million and a diluted net loss of $.28 per share in the second quarter of 2011. Overall revenues were $8.8 billion, which were higher than analyst estimates, while wireless service revenues were $7.3 billion. The operating loss was?$629 million. The company says it sold?1.5 million iPhones in the quarter, some 40 percent to new postpaid customers. That is exactly level with the number of iPhone sales last quarter. But that also helped contribute to strong postpaid net additions of 442,000, nearly double those of last quarter and the same quarter a year ago.

Michael Jackson Kids "Ambushed" By Family Members at ...

Several of Katherine Jackson?s children allegedly ?ambushed? Michael Jackson?s?kids ??Prince,?Paris, and?Blanket ? at the?matriarch?s home in Calabasas, California on Monday.

According to Katherine?s lawyers, ?Certain Jackson family members ambushed Katherine Jackson?s home after their vehicle tore through security gates on the tails of the SUV containing Michael Jackson?s children.?

?After exiting their vehicles, Jackson family members ran up to Michael?s children as they yelled and began to aggressively grab at the cell phones in their hands,? says the statement, adding, ?Out of concern for the well being of Prince, Paris and?Blanket Jackson, the children were forced to temporarily leave their home and taken to a safe location.?An altercation ensued shortly thereafter and law enforcement arrived at the scene.?

An L.A. County Sheriff?s spokesman confirmed there was indeed a physical altercation between two unnamed individuals, but no one was arrested.

A possible battery is under investigation, said the spokesman.

Katherine?s legal team further claimed, ?Following the incident, it was learned that one of the family members who was part of the ambush admitted that a plan has been in place for the last three years to remove Katherine Jackson from her home and her beloved grandchildren.?

On Saturday,?Katherine?s nephew Trent Jackson?reported the family matriarch ?missing? after her grandchildren were?unable to get in touch with her for a week.

Michael Jackson?s daughter Paris even tweeted, ?my grandmother is missing. i haven?t spoken with her in a week i want her home now.?

?If anybody sees my grandmother, please call the authorities,? she added.

Katherine, it was later discovered, is in Arizona with her daughter Rebbie ? though she?s still not had any contact with Michael?s children.

Jermaine Jackson tweeted, ?I want to reassure everyone (inc all sudden medical experts) that Mother is fine but is resting up in AZ on the orders of a doctor, not us.?

He noted at the time, ?We are not inventing or plotting anything. We are following doctor?s advice. Period.?

Curiously, though, Jermaine was one of the family members who was on Katherine?s property in Calabasas, California on Monday when the alleged ?ambush? took place.

Beverage Ban Ineffective, Punitive Toward Restaurant Industry ...

NEW YORK, July 24, 2012 /PRNewswire-USNewswire/ ??New York's proposed beverage ban is a misguided and ineffective tactic against obesity and unfairly targets the restaurant industry, a leading job creator in New York City and nationwide, the National Restaurant Association (NRA) told the New York Department of Health in a public hearing on the proposal today.

"There is no scientific evidence to demonstrate that restricting the size of beverage containers for sugary drinks or setting a caloric limit of greater than 50 calories per 16 ounces in restaurants will have any impact on obesity," said Joy Dubost, PhD, RD, the NRA's Director of Nutrition and Healthy Living who testified at today's hearing. "CDC data indicates the majority of people purchase their sugary drinks from convenience and grocery stores, which are excluded from the Mayor's proposal. Instead of demonizing sugar-sweetened beverages in restaurants and foodservice establishments in an attempt to reverse the obesity epidemic, we collectively must focus on policies and practices where there is evidence to indicate there will be a consumer behavioral change which leads to positive health outcomes."

Data from the United States Department of Health's Center for Disease Control (CDC) indicates that sugar-sweetened beverages account for between 5-8 percent of daily caloric intake with 50 percent of the population not consuming any sugary drinks. CDC data also indicates that most of the sugar-sweetened beverages consumed away from home are not obtained in restaurants, but rather from stores.?? ??

"This proposal misplaces responsibility on some small business operators, impedes commerce, creates an uneven playing field from a business perspective, and produces a false sense of accomplishment in the fight against obesity," said Scott DeFife, Executive Vice President, Policy and Government Affairs for the NRA. "The restaurant industry is committed to its proactive role in addressing obesity, and we urge public health officials in New York to put all of their energies into public education about a balanced lifestyle including a proper diet and exercise rather than attempting to regulate consumption of a completely legal and safe product enjoyed universally at restaurants."

Mayor Mike Bloomberg's proposed Amendment of Article 81 of the New York City Health Code would prohibit the sale of sugar-sweetened beverages above 16 ounces in restaurants, delis, movie theaters, stadiums, food carts and other venues throughout the New York City area. The ban extends to any beverage ? exclusive of milkshakes and alcoholic drinks ? with more than 25 calories per 8 ounces, including some sodas, coffees, teas, smoothies and lemonades.

As a member of the New Yorkers for Beverage Choices coalition, the NRA has worked to educate policymakers and consumers on the ban's extensive reach and harmful impact on New York City eateries. The board of health's vote on the proposal is scheduled for September 13.

[Featurama] How to Add Flavor to the Roster of PlayStation All-Stars ...

What an odd thing this PlayStation All-Stars Battle Royale has become. Here we have something that on appearances seems to be a Smash Bros. clone (even if the developers refuse to acknowledge it).? It is an interesting game to look at on paper and analyze how it will affect the market, but the question remains whether it can live up to it?s inspiration.

Sony has by far the most diverse portfolio of games in this business. So when a game like Battle Royale comes along and doesn?t seem to get the attention that the Sony brand can bring, then something just isn?t right. With the game coming only a few short months from now, I?m not sure there is much to do to boost confidence in the game, but conjecture is fun anyway.

With such a small list of characters revealed so far, there is so much potential in what new characters could spice the game up with.? Here are some ideas on who could help sell Battle Royale.

More Dames

I understand that female representation in video games is hard to come by.? The first and only female character in this game however shouldn?t be Fat Princess. If there is anything that Sony has showcased, it?s that they are proactive with females in games and game development through their G.I.R.L. scholarship. To sit behind and have Fat Princess as the default female is a little ridiculous.

Lest anyone forget, Sony is the one that debuted one of gaming?s strongest females in Lara Croft.? Sony has time and time again promoted strong female protagonists like Nariko from Heavenly Sword and Firiona Vie from Everquest and still does so with upcoming games like Beyond: Two Souls. Seriously, no love for Kat from Gravity Rush right now?

There are a great number of excellent female representatives in Sony?s backlog.? Hand picking a character like Fat Princess to showcase over one like Jeanne d?Arc is a bit silly to me.

More 3rd Party

Two 3rd party characters have been revealed for Battle Royale. Heihachi Mishima of Tekken fame and Big Daddy of Bioshock fame.? You have the strongest cross promotional 3rd Party Sony character the company has ever had and Xbox 360?s 2007 game of the year representing the 3rd party so far.

Unfortunately, Heihachi is an old trick used in Soul Calibur II and the crossover game Street Fighter X Tekken.? Sure Tekken has had their toes in Sony?s sandbox since the beginning, but their are plenty of colorful Tekken characters that could have made the journey.? Ones? with more impact.

Really though this is only the beginning.? Sony made their name with courting 3rd party development studios from Nintendo.? Studios like Squaresoft, Konami, Enix and many many others.? I?m not saying the game has to include Cloud or Tidus from Final Fantasy, but I know a lot of people would support that.? Mostly because those characters have been representative of quality Sony products.

Bringing in Sony Santa Monica studios did a lot to give this game credibility in the name, however there is still some doubts newbie developer SuperBot Entertainment can?t live down.? Bringing in outside development studios with a long history of excellence only adds to this game.

More Cross Promotion

When Solid Snake appeared in Super Smash Bros. Brawl, I had an issue with it.? Here we had a character who hasn?t made a fresh appearance on a Nintendo console since the Game Boy, being added to the one Nintendo title that was a true love letter to Nintendo consoles. It irked me because Sony has been the home console for the entirety of the Metal Gear Solid franchise.

It is with this train of thought that I wondered if the Nintendo could have Snake, ideally Sony should have Raiden. Raiden?s Rising will be coming to PS3?s soon and that would be a great way to highlight the character. As would any number of newer titles like the Last Guardian, Final Fantasy X HD?s Tidus, Teddy from Persona?s upcoming games and even Dante from DMC.? These are all big games for 2012 and 2013 that could do for some cross promotion.

Sony has many titles in the pipeline from 3rd party and 1st party studios.? Showcasing the games might not be such a bad idea.

More Japan

Simply put, Sony?s Japan Studio is one of the most interesting production studios in the world.? These are the guys who have made or are responsible for Demon?s Souls, Shadow of the Colossus, Patapon, Gravity Rush, Ape Escape, Rogue Galaxy and Siren.? Lots of great games without any representation above.? In fact, only two characters so far from the Battle Royale list were created by Japanese developers.? Three if you can stretch to count Mainichi Issho as a game.? Just like Heihachi before, Toro?s surprise had already been ruined by the crossover title Street Fighter X Tekken.

So that leaves a long list of titles that Sony owns that are completely left out of this equation.? That doesn?t even include the great number of exclusive developers like Nippon Ichi that develop for the company.? Katamari Damacy has always been a PlayStation darling.? To have a Japanese company create an all-star list of characters without many Japanese names is really hard to see.

A western developer is creating PlayStation All-Stars Battle Royale and it really feels like it.

More Retro

How many of you recognize that character above? Probably not many.? For a lot of us older folks, this was one of the first games we ever owned for Sony?s PlayStation.? Meet Robbit from a little game known as Jumping Flash!

When Super Smash Bros. Brawl came out 4 years ago, it was released as a love letter not only to current games, but to those of the past.? Collectible trophies, stickers and levels from ages long past were represented throughout.? So far we have seen very little of this.? In fact, the most interesting thing that I have seen of this game comes from Parappa the Rapper.? His stage is by far the coolest looking one I?ve seen and that is because it is an homage to what I grew up with.? It looks different and this game needs that right now.

In official screenshots I can?t even see any difference between the Helghast and Nathan Drake.? That?s because in all this brown and gray, there are few characters with any of the color that the previous generations produced.? Crash Bandicoot or Spyro the Dragon never had these issues.

Many of the greatest franchises in gaming began on the PlayStation.? Some aren?t as prevalent today, but many identify those characters as Sony games.? Branch out and throw a little Wild Arms or Alundra to some of the more faithful PlayStation owners.

Punch is what PlayStation All-Stars Battle Royale really needs.? Yeah we all love those gritty anti-heroes Kratos and Cole Macgrath, but there is so much on this platter that this roster seems a bit shallow so far in its attempt.? Shake things up with a character like Sir Daniel Fortesque for goodness sakes.

Of course this might be all on deaf ears.? Right now this game is probably in fine tuning.? However, a man can dream of the day when Gitaroo Man shows up out of nowhere to crack Sweet Tooth in the sweet tooth with his guitar.? There are still 3 months until the title is released so there are plenty of dates to reveal more info.

Even if there is nothing more than Ratchet and Clank left to reveal, there is always the potential for DLC. Right?

Researchers find driver of breast cancer stem cell metastasis

ANN ARBOR, Mich. Researchers at the University of Michigan Comprehensive Cancer Center have found that a cancer gene linked to aggressive spread of the disease promotes breast cancer stem cells. The finding implies a new way to target the behavior of these lethal cells.

The finding involves the cancer gene RhoC, which has previously been shown to promote metastasis of many types of cancer. RhoC levels increase as breast cancer progresses and high levels of RhoC are associated with worse patient survival.

Cancer stem cells are the small number of cells within a tumor that are believed to fuel the tumor's growth and spread. Researchers believe traditional chemotherapy and radiation treatments often become ineffective because they do not kill the cancer stem cells, and that the key to future treatments is to develop drugs that target and kill these cells.

This new study, which appears online in PLoS ONE, suggests a new way to get at the cancer stem cells.

"Targeting the specific molecular cogs driving the cancer stem cell machinery responsible for the cancer spreading has potential for future treatments. Eliminating cancer stem cells may ultimately be necessary to cure certain cancers, but in the meantime, we may be able to manage the cancer stem cell population and the invasive behaviors of these cells by disrupting the molecular machinery, using RhoC as a target," says senior study author Sofia D. Merajver, M.D., Ph.D., professor of internal medicine and epidemiology at the University of Michigan and scientific director of the breast oncology program at the U-M Comprehensive Cancer Center.

The researchers looked at breast cancer cell lines that were highly metastatic and cell lines from normal breast tissue. By inhibiting or overexpressing RhoC, they found that RhoC expression is necessary to cause metastasis in both cell lines, and that RhoC overexpression alone can cause metastasis. The researchers also tested this in mice and had similar results.

Merajver's lab, in conjunction with other U-M researchers, is studying a novel small molecule drug to inhibit RhoC, which has shown promising initial results in the laboratory. The researchers are continuing to develop this inhibitor, which will require several years of additional testing in the laboratory before potentially advancing to clinical trials.

Breast cancer statistics: 229,060 Americans will be diagnosed with breast cancer this year and 39,920 will die from the disease, according to the American Cancer Society
